［意味］

ゆで卵の一種。黄身が半熟状態で、白身が固まり始めた状態のもの。卵黄が65度、卵白が75度くらいで固まり始めることを利用して、65度より少し高めの湯で30分ほどゆでて作る。温泉に入れて作ったところからの名。
